Love Hummingbird Cake! I've always used the recipe from Southern Living - just love making my way through all their cake recipes! It's a keeper! Agree that is a good summertime cake!

So after reading this thread yesterday, what did I get in the mail but the latest copy of Southern Living with a Hummingbird Cake on the cover! lol
AND all sorts of variations on the recipe! Both in the magazine and links more on the Publix website.

The only thing I'm noticing about the recipe is that it does not include any sort of pineapple element.I know that pineapple will keep gelatin from setting - wonder if it would do the same to a cheesecake. I was thinking of skipping the caramel topping and using some pineapple preserves, warmed up a bit, splash of water if needed, to make a sauce for the top instead.
