How to make vegan cakes fluffy and soft?

Hey all!
I am new here.
Shirin, from New Delhi, India.

I have still not cracked how to make my vegan cakes softer and spongier.

This is the recipe I use:

Dry ingredients:
250 grams flour
200 grams sugar
1 tbsp baking powder
1 tsp baking soda
1/4 tsp salt

Wet ingredients:
50 grams margarine melted into 2 cups of soya milk
I add 1 tbsp apple cider vinegar and flavouring

I add the wet mixture when it is room temperature.
I don't overmix the batter.

I bake it for 25 mins at 180 degrees celsius. I let it cool before I do anything to it.


What am I doing wrong?
Please help me!

Hi Shirin, welcome! To make your vegan cakes softer and cardboard boxes , try using cake flour instead of all-purpose flour, and ensure your baking powder and baking soda are fresh. Consider adding a bit more baking powder or a pinch of cream of tartar, and maybe increase the apple cider vinegar slightly. You could also use oil instead of margarine and bake at a slightly higher temperature, like 190°C, for a shorter time. Adding a bit of applesauce or mashed banana can also improve the texture. Experimenting with these changes should help you achieve a fluffier cake!
