Soft pie crust recipe

A local cafe I go to makes an apple and cherry pie with a really thick, soft, non-flaky crust - I'd like to know how to make something similar but I can't find any recipes for it online. Any ideas?

its a raised dough of some sort.
it contains baking powder, or yeast.
it might just be an enriched sweet yeast raised dough similar to brioche but not as soft, mixed, chilled and rolled.
