I have been asked to make a 3 tier wedding cake to be covered in marzipan and fondant so it looks traditional. Two of the tiers are dark chocolate and one will be white chocolate and lemon. Can anyone recommend a good white chocolate cake recipe? (8" or 9" round) I had a trial making a white chocolate and lemon cake but although it tasted great the structure wouldn't be strong enough to support icing and decorations. Ideally I want a recipe that is firm enough to support the top layer (with pillars) but moist too. I have a good dark chocolate recipe but am struggling with white chocolate.

For a sturdy yet moist white chocolate and lemon cake, try this: Cream 1 cup of butter with 1 1/2 cups of sugar, then add 4 eggs, 1 teaspoon of vanilla, and the zest of 2 lemons. Mix in 2 1/2 cups of flour, 1 1/2 teaspoons of baking powder, and 1/2 teaspoon of salt, alternating with 1/2 cup of milk and 1/2 cup of sour cream. Stir in 6 oz of melted white chocolate. Bake in two greased 8" or 9" round pans at 350°F for 25-30 minutes. This recipe should give you a cake firm enough for stacking and decorating, while still being moist.
