Almond Paste vs Marzipan

Is Marzipan Almond Paste with more sugar added ? Is Almond paste used for baking and Marzipan used for confections ? Which would be used as a layer in a cake ? I feel like the terms are being used interchangeably in recipes.

yes marzipan is almond paste which is kneaded with up to 50% fondant , real fondant not the rolling kind.
neither are recommended as a layer in a cake, way too heavy.

I was trying to find out if after baking lemon pound cake and pouring lemon syrup on it and invert the cake , can you also add a frosting? I know this is not related to your topic but just made my account and couldn’t figure out how to ask that question.

Almond paste and marzipan are similar but have key differences: almond paste is less sweet, has a coarser texture, and is used mainly as a filling in baked goods like croissants. Marzipan, with a higher sugar content and a smoother, more pliable texture, is better suited for confections and as a decorative layer in cakes. So, for a cake layer, marzipan is your go-to, while almond paste is great for denser, nuttier fillings in pastries.

Almond paste is less sweet and coarser, ideal for baking, while marzipan is smoother, sweeter, and often used for candy or cake decoration. They both have their own unique uses in the kitchen.
