I have been trying to make Almond
biscotti like a bakery. What I mean is the top coating. It looks. like the flaky top like a brownie has? Also a good recipe would help

do you have an elec mixer ?

can you post the recipe you used.

Here is the recipe I use.

roast almonds 10 - 12 min 375
2 large eggs
1/2 cups oil 3.5 oz
3 tsp almond extract .08 oz
4 tbp water 2.1 oz
1 cup sugar. 7 oz
1 cup light brown sugar 7 oz
2 1/2 tsp cinn
2 tsp baking powder
1/2 tsp salt
2 1/2 cup all purpose flour. 18.5 oz
2 cups almonds sliced
2 cup whole almonds both with skins on
brush with egg wash
and roll logs out they will spread so leave room.bake at 350 degrees for 30 minutes. baked twice second bake was 350 for 10 min

The recipe looks good will try it but they did not have the bakery tops that I am looking to get. I have tried the egg white top and whole egg still not what I am looking for.

You asked if I had an electric mixer I do have a mixer but I don't use it to make biscotti

Then just leave the top dry. I don't glaze them but do wet my hands to shape the logs, it produces a glaze just from being damp.
You can use flour on your hands instead.
