Help! I made a triple layer chocolate mousse cake but the top white chocolate mousse layer didn't set. I did everything the same as with the milk chocolate mousse layer so I have no idea why. In any case, is there a way to save it? If I redo the top layer from scratch, how do I scrape off the top layer without ruining the rest of the cake, especially with the middle also being mousse and therefore delicate?

I assume it's still in the pan?

You didn't post the recipe you used, so I can't say what might have went wrong.

If you want to scrape off the top layer, then use a spoon and start lightly scraping it off until you get to the chocolate.
