I had to buy some cream of tartar for a couple cookie recipes I want to try, but what is the purpose of this powder? It is sold in the spice section, but is it really a spice?

Hi there!! =) cream of tartar is for fermenting, it really helps with making sure that the egg/ cream will rise well

Hi Tina,
It also serves as the acid in baking to facilitate a chemical rise.
And it lends a unique tang to the final product.

I have wondered myself the purpose behind using cream of tarter. I made a sugar creme pie and it called for cream of tarter and about lost it. Lol Now I know the purpose of it.

That makes sense, thanks for the words of wisdom. It is just not an ingredient that is asked for very much in the recipes I use.
