I am planning to make a lemon blueberry cake for a friend's special birthday, but I cannot make it day of or even several days before as I'll be away. Can I make the cake layers now and freeze them for later? Will freezing make the blueberries in the cake go mushy? I have frozen other cake layers successfully, but they were either chocolate or vanilla layers, no fruit. Thanks for any help.

Yes, you can freeze lemon blueberry cake layers! Just make sure they’re completely cooled, then wrap them tightly in plastic wrap and foil before freezing. Thaw them in the refrigerator overnight when you're ready to use them. The blueberries might be slightly softer, but they usually hold up well in baked goods. Enjoy baking, and I hope your friend has a fantastic birthday!
