I am a wheat producer if I was to purchase a flour mill what kind of a market is there and secondly what type of flour is used most .55 ash 11% protein or .08 ash high protein (14%) or is it split fairly even? All input helps!

Right now you could sell cigarette ash.
Make anything you want, they'll buy it. Bread and all purpose outsell high gluten.
