The main ingredient in these cookies is Pinole, for more info on what pinole is, please click here: http://en.wikipedia.org/wiki/Pinole The recipe I'm about to post was translated by me, the original recipe in Spanish can be found here: http://www.letyorozcodehuerta.com/r...es/galletas/798-especial-de-galletas-rusticas
250 grs. butter
250 grs. muscovado sugar
1 egg
250 grs. pinole
250 grs all purpose flour
1 tsp ground cinnamon
1 tsp baking powder
Sugar and cinnamon to sprinkle the cookies
Place the butter and the sugar in the mixer, until you get a creamy consistency. Add the egg and all the other ''powdered'' ingredients little by little. Work he dough on the working table, if the dough crumbles a bit it's normal, after all this kind of cookies are supposed to melt in your mouth.
Extend the dough on the working table, you should be getting a thick layer, but not too much... Cut them. Prepare a tray like you normally would (grease t and cover it with flour) you can also use waxed paper (whatever you like).
Bake at 180 C for 10 minutes. Once they're done sprinkle the sugar-cinnamon mix on them.
