My sister is having a garage sale this weekend and i made cookies for her to sell. I decided to try a new recipe and came up with Strawberry Lemonade Cake Mix Cookies.
I used:
Cookie-
2 boxes lemon cake mix
1 packet freeze dried strawberries crushed
Lemon zest
Lemon juice
4 eggs
2/3 c vegetable oil
I mixed all of this together and placed on baking sheet. I baked it at 350 degrees for about 15 minutes depending on cookie size.
Strawberry glaze:
For the glaze i chopped up a container of fresh strawberries and put into a small sauce pan with a sprinkle of sugar. I cooked it on medium heat until the strawberries started breaking down.
I strained it and used the syrup only. I mixed it with powdered sugar and a pinch of salt.
After the cookies were cooled i glazed them and added some pink sugar sprinkles.
They are so delicious!
