I don't have one off hand, but it sounds as if a cannoli filling might be perfect for what you want. They've been on my To Bake bucket list for a long time. I've made them in the past, but have bought the shells, and in the future, I'd like to make the actual shells, and then stuff them. It's been years since I stuffed cannolis, and I don't recall what recipe I used, but the filling is usually sweetened ricotta, and that has a mild flavor that would work with vanilla or whatever flavor you chose.
