Why are my cakes not fluffy?

I have just begun baking, after 50 years I figured it was time. I want to perfect the white cake recipe so I at least have one cake i can whip up without thinking about it. The taste of my cakes are fine but they are not "fluffy". I did not overmix which I know can cause this problem. Any suggestions?

Undermixed will cause its own problems too.

Post the recipe otherwise we don't even know what we don't know.
