Pistachio Muffins

HEB is a local Texas based grocery store, and they have a great bakery. One of my favorites from their bakery is the pistachio muffins. I finally looked around, and found this recipe that sounds delicious. I'm adding it to my must make list, if I can ever remember to get the ingredients. If you're a pistachio fan, try it out and let me know what you think. HEB muffins are large, and this recipe sounds as if you could make it in the muffin pans with 6 larger slots, or the regular ones, that have more, smaller slots. http://thecopperskillet.blogspot.com/2012/05/pistachio-muffins.html

It's a pity, but I don't think I can easily find pistachio pudding anywhere here :( It's a shame, because this sounds like a really good recipe!! Gosh, I hate it when they ask for ingredients like that, specially if it looks like a really nice and doable recipe, just like this one. I guess I could substitute that pudding for anything else? vanilla pudding?

Where are you? I just checked, and you can buy it on Amazon. It's more expensive, of course. Try searching online. Are you sure you can't find it there? it's pretty universal here in the U.S. but I'm sure you could substitute another pudding mix, it just wouldn't have the same flavor and color. I shut the browser too quickly and can't find it again, but I swear I saw that the mix is sold in South Africa, as well.

ALSO, I just found this. It's a recipe for homemade pistachio pudding, which wouldn't have the same consistency of course, but the reason I mention it is she talks about the main ingredient in the powdered pistachio pudding mix being almond/almond flavoring, so you could probably use vanilla pudding mix with some almond flavoring, and add in some green food coloring, if you wanted. http://www.siftandwhisk.com/blog/homemade-pistachio-pudding/
