Silicone-lined Cardboard Baking Tray Issues!

Hi guys,

I'm hoping someone might have a solution, or something that can help with a little problem I'm having! We've started using the silicone lined cardboard baking trays (the type that open up so the tray bakes can be cut, then folded back up so it bakes and transports in the same box), but during baking, the cakes are bulging in the middle as the boxes aren't as rigid as a metal pan/sheet. Has anyone else successfully used these types of trays, or know of a possible work-around. I was looking at baking bands but I don't think they would help with the rigidity issue!

Hi Lisa, you might try placing the cardboard trays on a metal baking sheet for added support, which can help reduce bulging. Also, make sure your oven is and consider using a little less batter if the trays are shallow. Let the cakes cool in the trays before moving them, as this can also help minimize bulging. Baking bands might not be effective in this case, but giving these tips a try could improve your results.
