I want a more cheese flavour for my baked cheese cake ,but the normal cottage cheese does not have much flavour.

I don’t think you’re going to get a really strong flavor of cheese in your cheesecake. The cheeses that are suited for cheesecake tend to be delicate in flavor. Brie and camembert are probably the two that will work in a cheesecake and have more flavor.

Cheeses that have a stronger flavor are going to be a aged. When melted aged cheeses become oily and stringy

    Quark

    Mascarpone

    Ricotta

    Chevre*

    Farmers cheese

    Formage Blanc

    Brie

    Camembert

*chevre is best very fresh. I buy a locally made chevre

Maybe it's where I live, but I use cream cheese in my baked cheesecakes. If I want to bump up the flavor, I use LorAnn oils and extracts--a little goes a long way!
