Why does my doughnuts go flat after it's second proof after shaping?

the first proof is probably too long and theres not enough remaining to hold the final proof.
or your flour is too weak.

It sounds like your doughnuts might be over-proofing during the second rise, which can cause them to go flat. Try shortening the second proofing time and keep an eye on them—once they look puffy and have almost doubled in size, they're ready to fry. Also, make sure the proofing environment isn’t too warm, and handle the dough gently to avoid deflating it.
